Christmas Cheesecake

Here's another cheesecake recipe that can be made without a springform pan.

Christmas Cheesecake

Crust:
1/2 Cup flour
1/3 Cup butter, room temp
1/2 Cup brown sugar

Filling:
2 - 8 oz. cream cheese, soft
1/2 Cup sugar
2 large eggs
4 Tablespoons milk or cream
2 Tablespoons lemon juice
1 teaspoon vanilla

Crust: Combine ingredients, pat in an ungreased 8" square (or 8" round) pan. bake at 350 degrees for 8-10 minutes. Remove from oven.

Filling: Combine filling ingredients, beat until smooth. Spread over the partially baked crust and put back in the oven.

Bake for 30 - 35 more minutes.

I've made this cheesecake and it was wonderful. My family loved it. If only it didn't disappear so quickly. I had to stash a piece if you can beleive that :) Thank you for sharing your delicious recipes. I've tried a few others that have become regulars as well.
