And of course I make mine the way she did. can pink salmon (she left the bones in, I don't), not drained (she said the liquid made the recipe go further) 1 egg, a splash of milk (about 1/3 cup) and an entire sleeve of saltine crackers crushed. that's all!!! no onion, no seasoning, nothing else. She fried some up the first time I brought my now husband over for dinner. He took one look, got up and went to frig, and brought back some mustard to put on his. The look on my mom's face was priceless. 50 years later I still make them this way. Other than a dollop of mustard my husband requests his patties fried crispy dark brown. we eat them often. He never could get my mom to try mustard on her patties, ha. Thanks for the sweet memories. I am an Eastern Orthodox Christian and we are in the midst of the Nativity Fast so we do not eat, among other things, dairy. Today is a fish day. Instead of the egg to bind, I ground up some flax seeds and it did the job nicely. Since the grinder had cumin seed in it before, that also went into the patties. Along with some garlic/ginger powder. Mama made them with spaghetti or for breakfast -<br />They are healthy and a frugal way to feed the fam - and also VERY delish!<br /><br />Have to ask you: WHERE DID YOU FIND THAT CART GIRL? I NEED ONE! HAVE BEEN KEEPING MY EYE OUT FOR ONE AT ALL THE CONSIGNMENT SHOPS/THRIFT STORES/ ETC!
