Dutch Apple Pie

9" pastry shell, unbaked (I use a frozen deep dish pie crust, easy and it tastes great!)
I have also used a Pillsbury Refrigerator Pie Crust with excellent results.

5-6 apples, peeled and sliced
3/4 cup sugar
1 teaspoon cinnamon
(I add a pinch of ground coriander but that is optional)

2/3 cup flour
1/2 cup brown sugar
1/3 cup margarine or butter, sliced (I prefer butter)

Preheat oven to 425 degrees.

Combine apples, sugar, and spice(s) until apples are thoroughly covered. Place in the pie shell.

Mix flour, brown sugar, and margarine or butter until crumbly. Sprinkle over apples, making sure to press in to fully cover all the apples and "tuck" into sides.

Place pie pan on cookie sheet or something similar.

Bake for 15 minutes, then...

reduce heat to 375 degrees and bake an additional 35 minutes.

I find baking on the bottom shelf of the oven helps keep the crust crisper.

This basic recipe is my favorite for Dutch Apple Pie.

It is from the community cookbook called Eet Smakelijk put together by the Holland Junior Welfare League of Holland, Michigan.

Mine is now yellowed with age and food stains... a very good thing.

Chicken and Dressing Casserole

I made this for a family get together and everyone asked for the recipe. It's SO easy and good for pot lucks. I make it most of the year with chicken but you can also use leftover turkey on Thanksgiving.

Chicken (or Turkey) and Dressing Casserole

5 Cups Chicken or Turkey, cooked and cubed or shredded
(three deboned chicken breast work fine)
6 Slices bread, torn or cubed (either white or a light wheat bread)
1 Can Cream of Mushroom soup (no water added)
1 Can Chicken Noodle soup (no water added)
1 Stick butter, melted
1 Egg, beaten
Poultry seasoning to taste

Combine all ingredients. Pour into 9 x 13 dish. Bake at 350 degrees for 40 minutes.

Can be baked and reheated later.

Pumpkin Cookies

I am posting these again just so new readers will find the recipe easier (and I finally remembered to take pictures before they were all eaten). A very delicious cookie and one of or favorites.

They are from Brenda Hyde's former Old Fashioned Living e-mail newsletter.

Pumpkin Cookies

Ingredients:
1 cup shortening (I use 1/2 butter, 1/2 margarine)
1 cup sugar
1 cup mashed pumpkin
1 egg
2 cups flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt
1 cup raisins (optional, I prefer them without raisins)

*I often double this recipe by doubling all ingredients and using an entire can of pumpkin.

Cream shortening , sugar and pumpkin. Add eggs and
mix well.Add sifted dry ingredients and raisins. Drop
from spoon onto greased cookie sheet and bake at
375 degrees F. for 10 to 12 minutes.

Frosting for Pumpkin Cookies

3 Tbsp. butter
4 tsp. milk
1/2 cup brown sugar
1 cup powdered sugar
3/4 tsp. vanilla

Cook butter , milk and brown sugar until dissolved:
Cool and add powdered sugar and vanilla .

**Finely chopped walnuts or pecans
(optional for pressing into the frosting if desired... immediately after frosting the cookie)

Spread on cooled cookies (original recipe called for frosting them warm, I found waiting until they cool much better). Yield 4- 5 dozen.

*  Be sure if you double cookie recipe to also double frosting.
**I usually press finely chopped nuts into about half the cookies.
